This traditional fair, which dates back to the 19th century, originated when Basque farmers (“baserritarras”) were required to pay rent for the land they cultivated. This payment was due on December 21st, and the farmers would come to the city to settle their debts with their best products. To make the trip worthwhile, they would bring their entire harvest to sell to the city dwellers, and thus began the Santo Tomás market. Over the years, it has evolved into a lively gathering that celebrates rural traditions and local gastronomy.

The fair takes place in the heart of the city, mainly in the Plaza de España and Plaza de los Fueros, where a wide array of stalls showcases the best of the region’s products. Visitors can find seasonal fruits and vegetables, cured meats, cheeses, preserves, and artisan baked goods, along with traditional Basque delicacies such as talo con chistorra (a corn flatbread filled with spiced sausage). Many stalls also sell handcrafted items, including textiles, ceramics, and wooden crafts, offering unique gift options for the holidays.

One of the highlights of the fair is the livestock exhibition, a nod to its agricultural origins. Farmers bring sheep, goats, cows, and other animals to display, fostering a connection between the urban and rural worlds. This aspect of the event is particularly appealing to families and children, who can learn about the importance of farming in the region.

The festive atmosphere is enhanced by a variety of cultural activities, such as traditional Basque music performances, folk dances, and craft demonstrations.
