The Basque Cake ( Euskal Pastela, Pastel Vasco or Gateau Basque ) is one of the most emblematic desserts of the Basque Country, celebrated for its simplicity and rich flavor. This traditional pastry typically consists of a buttery, crumbly crust filled with either vanilla pastry cream or cherry jam, showcasing the region’s preference for straightforward, high-quality ingredients.

The origins of the Pastel Vasco date back centuries, rooted in the rural areas of the Basque Country and Navarre. It was traditionally prepared in homes using ingredients readily available, such as eggs, milk, and flour. Over time, it evolved into a beloved regional specialty, and its recipe became more refined. Today, the Pastel Vasco is a staple in Basque patisseries, often served as a dessert or enjoyed with coffee.

It is easy to enjoy an excelent Gateau Basque in the French Basque Country, as they are baked and sold in most patisseries. In contrast, only a few pastry shops or artisanal bakers produce it in the Spanish side of the Basque Contry.
In the French Basque Country, patisseries such as Goxokia in Mauléon-Licharre and Maison Pariès, with boutiques in Saint-Jean-de-Luz, Bayonne, Biarritz, Espelette and Urrugne, are known for their exceptional versions of this dessert. There is even an Association for the promotion of quality Basque cake, named Eguzki, that contains an useful list of all adhered bakers.
In Gipuzkoa, Maison Pariès has a shop in Donostia and Aramendia Pasteleria has many locations around the province. The Basque cake offered by Aramendia Pasteleria has won several prices in recent years.
In the rest of the Basque Country, many renowned patisseries such as Arrese or Zuricalday offer small Basque cakes, but to truly enjoy this dessert, we recommend visiting any of the many Fair and Markets that are held year-round throughout the region, and purchasing a large Basque cake directly from an artisan producer.
