Sugarra grill house

Sugarra (which means “flame” in Basque) is a small, intimate, high-quality grill restaurant in the Uribarri neighbourhood of Bilbao, specializing in fire-and-smoke cooking using a Japanese-style Kamado ceramic grill.

The restaurant’s Kamado grill allows chefs to sear premium steaks and other ingredients quickly at exceptionally high temperatures while imparting the distinctive aroma of holm oak charcoal. Depending on the product being prepared, carefully selected walnut and apple wood are also used to enhance and complement its natural flavors. Combining remarkable versatility, precise temperature control, and the ability to generate the ideal amount of smoke for each ingredient, the Kamado delivers a depth of flavor that traditional grills cannot easily match.

Their signature dish is the txuletón (a large rib steak) from old cows (over 5 years, Simmental or Galician-cross breeds), dry-aged for at least two months to achieve deep flavor.
