Karmine is a contemporary restaurant located in the heart of Vitoria-Gasteiz, Álava.
Helmed by Chef Jabi Sarasua, the establishment pays homage to the region’s culinary heritage by reinterpreting traditional Álava dishes through a modern lens. The menu features locally sourced ingredients, including the rare vaca terreña beef, and revives nearly forgotten recipes such as the “cocido vitoriano” stew and asparagus “a la Urcelay”.
