In Lecumberri there's a place every good pork lover should visit at least once. It's called @maskaradadenda and it's much more than a restaurant: it's a factory, store and dining room; all on the same ship. Here, the absolute protagonist is the pig Pio black or Euskal Txerri, an indigenous breed of the Western Pyrenees (Navarra, Pais Vasco and Pyrénées-Atlantiques) that was on the verge of extinction and that Jose Ignacio Jauregi has recovered with mimic and a lot of vision.This pig is easy to recognize: pink, with black spots, large ears covering its eyes and a fat infiltration that already gives you hints of the flavor that comes next. They live free in the mountains of Arruitz, and that shows in the quality of their meat.
Here you can buy their sausages, cured meats or prepared dishes, but the best thing is to sit at the table and taste it all right there. They offer two tasting menus (maskarada 42 € and suletina 49 €) where the pork is the center of everything. Cooking without complications, very focused on the product: sausages, pates, croquettes, stews, grilled meat, roasted, raw,... Dishes that seem simple but have a lot of technique behind them, especially in the less noble parts. And yes, there are also homemade desserts like a pantxinet for souvenirs.
@maskaradadenda is a tribute to a pig well done, from rearing to the last bite. A site that is already a landmark in Navarra and that is starting to sound strong at a national level.
