Bar Gaucho

Bar Gaucho is one of the most famous pintxo bars in Pamplona and a true reference point for Basque and Navarrese gastronomy. Located beside Plaza del Castillo, in the heart of the old town, this small but constantly busy bar has earned a reputation for combining traditional flavors with creative, high-quality pintxos.

Bar Gaucho is especially popular for elevating classic bar food into something more refined while still maintaining the lively and informal atmosphere. The counter is filled with carefully prepared pintxos, but many of the house specialties are made fresh to order and served hot from the kitchen.

Among the most famous dishes is the huevo trufado, a creamy truffle egg served with potato foam, one of the bar’s signature creations and a favorite among regular customers. Another classic is the foie gras pintxo, lightly seared and served warm, combining rich flavor with simple presentation. Seafood lovers often order the grilled prawns or seasonal fish dishes, while the croquettes and Iberian ham are also highly recommended.

One of the interesting aspects of Bar Gaucho is how it helped modernize the pintxo scene in Pamplona without losing its traditional identity. Over the years, it has received numerous gastronomic awards and is regularly included among the best pintxos bars.
