Ola Sagardotegia is one of the most unique traditional cider houses in the Basque Country, combining gastronomy, history, and Basque cider culture in a spectacular setting near Irun.
The cider house was inaugurated in 1999 inside a restored 13th-century iron forge known as Arantzateko Burniola. The historic building was carefully recovered by the Bengoetxea family and transformed into the current sagardotegi, while preserving its impressive original stone walls, which can still be admired today and give the restaurant a very special atmosphere.
Like other traditional Basque cider houses, Ola Sagardotegia offers the classic txotx experience. During the cider season, which runs from January to May, visitors gather around huge wooden barrels called kupelas to taste natural cider directly from the cask. When the cry of “Txotx!” is heard, guests leave their tables and approach the barrels to catch the cider in their glasses directly from the flowing stream. This tradition is one of the most characteristic social rituals of Basque gastronomy.
The traditional cider house menu is simple but highly appreciated. It usually includes cod omelette, fried cod with peppers, a large charcoal-grilled txuleta steak, and Idiazabal cheese with walnuts and quince for dessert. The combination of natural cider, grilled meat, and lively atmosphere creates an authentic Basque dining experience.
Ola Sagardotegia also offers guided tours where visitors can learn about cider production, Basque cider traditions, and the history of the old forge building itself. These visits provide a deeper understanding of the relationship between Basque industry, rural culture, and gastronomy.
Reservations are highly recommended during weekends and throughout the txotx season, when the cider house becomes especially popular with both locals and visitors.
