Islares is an intimate restaurant located across from the iconic Guggenheim Museum. Helmed by chef Julen Bergantiños, it offers a refined homage to the culinary heritage of northern Spain, encompassing the Basque Country, Galicia, Asturias, and Cantabria.
Islares presents two seasonal tasting menus—A-8 and N-634—which evolve four times a year to showcase the freshest regional ingredients. Dishes such as empanada de cocido galego and porrusalda asada highlight the essence of northern Spanish cuisine with modern interpretations.
