Txispa is a Basque-Japanese fine-dining restaurant located in Axpe, Atxondo, led by Chef Tetsuro Maeda. It opened in May 2023 in a restored caserío (traditional farmhouse) near the world-renowned Asador Etxebarri.
Maeda draws on his years working under Bittor Arginzoniz and combines grill-based techniques with Japanese influences, using many local ingredients and even producing fermented seasonings and garden-grown vegetables on site. The tasting menu offers an elegant, seasonal experience that emphasizes fire, terroir, and precision.
Txispa holds a Michelin star, a Repsol sun and has recently entered The World’s 50 Best Restaurants extended ranking, at position 85.
