Vermutería Río is one of the most legendary tapas bars in Pamplona and a true institution in the city’s old town. Located just a few steps from Plaza del Castillo, this historic vermouth bar has been serving locals and visitors for generations and remains one of the essential stops for anyone wanting to experience Pamplona’s traditional pintxo culture.
The bar is especially famous for its homemade vermouth, served directly from the barrel in the classic style. However, the real star of the bar are their iconic fried specialties and amonth them the most famous one is the frito de huevo. The recipe has remained unchanged since the 1960s and consists of half a hard-boiled egg covered in creamy béchamel sauce, then coated in a light Orly-style batter and fried until perfectly crispy. The frito de huevo is so popular that the bar even has a counter on the wall tracking the total number sold and in January 2026 they reached the remarkable milestone of two million sold. After celebrating the achievement, the counter was reset to zero on January 26th, meaning that anyone visiting now is taking part in the beginning of the next million.
One of the fun facts about Vermutería Río is that despite its relatively small size, it regularly becomes completely packed during peak hours, with customers spilling out into the surrounding streets while balancing plates and glasses. The lively atmosphere is part of the experience, especially during weekends and during the San Fermín festival, when the bar becomes one of the busiest meeting points in the old town.
