Bailara Jatetxea is a gastronomic restaurant tucked into the beautifully restored 17th-century palace Iriarte Jauregia, in the hills of Bidania-Goiatz, Gipuzkoa.
Led by chef Enrique Fleischmann, its cuisine is deeply personal: refined, elegant, and rooted in seasonal produce. With a single tasting menu served across just five tables, Bailara focuses on flavor and emotion, combining tradition with subtle innovation.
The dining room, intimate with capacity for about 45 guests, overlooks a garden and valley setting, also accommodating weddings and special events.
