agollaga, located in the Barrio Ereñozu of Hernani, Gipuzkoa, is a restaurant built on the foundations of a centenary caserío, with roots dating back to 1903 when it was founded as a bistro and grocery, later becoming a restaurant in 1945.
Under chef Ixak Salaberria, the cuisine balances tradition and innovation: classic Basque techniques are the backbone, complemented by creative detailing and seasonal ingredients. Signature dishes such as Guisantitos de Primavera (Spring’s Little Peas) connect past and present.
The interior is welcoming: two main dining rooms with minimalist décor and tasteful splashes of color, plus a terrace ideal on fine days.
